Our El Salvador Las Mercedes El Rubi Honey is grown on the La Avila lot and offers a caramel and molasses flavor that finishes with mandarin. With a lingering sweet aftertaste and a bright, juicy mouthfeel, this Honey Processed coffee is a memorable cup that will get your day going. El Rubi is a lot from La Avila mostly consisting of Bourbon and SL28 varietals. This lot has a special terrain because it has a lot of red soil (clay) and is under the shade, making this a special micro-climate that gives coffee that amazing and special sweet flavor. This coffee was chosen by Holly Perry for her wedding blend, so you could say it has her personality-sweet and charming!

We at Klatch Coffee were drawn to Las Mercedes because of its great coffee, but we found what we fell in love with was the people, the process, and our shared passion for persistently striving to make coffee the best it can be. Finca Las Mercedes is a beautiful coffee farm with owners dedicated to care for their community, their workers, and the environment with the same care that they invest into their coffee. The Ortiz family provides healthcare, food, and clothing to those in the community that are in need. Las Mercedes is committed to ecological care, making efforts to preserve natural wildlife, to maintain compliance with our certifications in the way that the mill’s by-products are disposed of, and to avoid contamination. In the last few years, the Ortiz family has prioritized preservation by planting native trees. We are proud to offer this limited Direct Trade that is also Rainforest Alliance Certified. As part of our Direct Trade relationship, 25 cents of every pound is invested back into the Las Mercedes community, funding community sports programs and the Los Ortiz medical clinic.

One of best coffees I have ever tried!

Does well as a pourover

Been my morning cup the last few days, as a pourover. A little lighter body than some, but that's perfectly fine in a morning cup. Good, not great, frothing action; don't wait the usual 30 seconds. (Or perhaps my grind is still a tad too coarse.) Not a coffee for additions, I'd say.

The coffee is terrific. There is a subtle, yet delicious lemon flavor that carries throughout each sip. There is also a sugary sweet fruit flavor in the background. True to the flavor notes, an absolute stunner.

Fui a El Salvador en Diciembre 2021. Pobre el cafe Pacamara y cuando pobre el cafe Klatch. Pude recordar ese aroma suave del Pacamara, el sabor unico que con una tasa de cafe negro, complemento el pan dulce "napoleon" que compre en portos. El dia es alegre con una buena taza de cafe!
