Savor the flavors of cherry, lime, and peach in our Organic Nicaragua coffee. Finca El Pastoral, owned and operated by Juan de Dios, is a family-run farm spanning 150 acres of coffee production. Only the finest cherries are carefully selected for their natural processed lots, showcasing Juan de Dios’s exceptional skill and dedication to the family business.

At Finca El Pastoral, cherries are chosen for specialized processing, setting them apart from the more common washed method. This natural processed lot exemplifies the care and commitment Juan de Dios invests in every harvest. During harvest, the cherries are meticulously picked and transported to the dry mill, where stable weather conditions allow for even drying inside the cherry. Once drying is complete, the coffee is stored and later prepared for export at the same dry mill. Their integrated model, in partnership with J&M Family Coffee—the family-run exporter—ensures quality control and complete traceability from farm to export.

SHG refer to altitude, as High Grown and Strictly High Grown respectively. SHG coffees are generally valued as a higher quality bean, due to the slow maturation of the bean in higher and cooler regions. In addition, EP stands for European Preparation, a standard of acceptable green defects recognized by the industry.
